My husband and I were feeling homesick, which I've mentioned before from our home country of Brazil! So, we decided to make cheese bread or as we say in Portuguese: pão de queijo!

We didn't make it from scratch because we don't have the right machine. There are many ways to do it, but my husband's recipe requires to boiling oil, milk, and water. We definitely cannot do it with our hands.

Cheese bread is the most popular bread in Brazil, so many industries did mixtures with almost all ingredients (by the way, you can buy it here in Toronto).

We decided to use one of them, but you need to know precisely the right point to stop soaking the dough. In my opinion, that's the most challenging part (but not for us, right?).

I will explain what I did first and then I will tell you how to do it from scratch. That way, bread lovers will know how to do it in an easy and in a difficult way.

The first way is straightforward. Just get the mixture and add two eggs and 300g of water. If you have any concern with that mixture, the "how to do it" is written in the box. No secrets!

I have already told you before about how to add water, but I will explain again because it is essential. If you make any mistake, you can mess up everything. I always add two-thirds of water and mix all ingredients.

The next step is to soak the dough and add more water if you need. Sometimes I add more water, but you need to know if the mixture still dry or not. You will feel it in your hand!

I love beer, but my husband doesn't! So I had to do this next step without his help. I wanted to harmonize with my favorite beer (here in Canada my favorite one is Beau's - Lug Tread). I will try to explain why this beer is excellent with my cheese bread, just see the picture below.

Now, let me explain how to make cheese bread from scratch.

First, the ingredients and then I will give you all instructions.

Ingredients:

  • Sweet Sprinkles  (500g)
  • Milk ( 200g)
  • Water (200g)
  • Soybean oil (175g)
  • Egg -(150g) 4 units
  • Half Cured Cheese (500g)
  • Salt (10g)

Instructions:

  1. The cheese should be grated to make the mixture better.
  2. Boil oil, milk, and water to scald the sprinkles.
  3. Add the boiling mixture in the sprinkle and stir until the dough is homogeneous.
  4. Make sure the mixture from the previous step is cold before proceeding. Add the eggs one by one when the mixture. Otherwise, the egg will be cooked, and the mixture will completely spoil.
  5. After the egg, add the cheese to the mixture and stir until the mixture is homogeneous.
  6. Model the cheese bread to the desired size and take it to the oven (preheated) at 180ºC.

PS: The cheese bread dough will not look like the same as regular bread, because it is very greasy.

How to Shape Cheese Balls:

To shape, you need to coat your hand with oil, otherwise, you will not be able to make the shape you want.
